Last week we were invited to a neighbors home for dessert. And this is what was served, Yummy moist chocolate cake. My husband promptly requested the recipe. To our surprise it was a zucchini cake. What? but this doesn’t taste like zucchini.  Two zucchinis were still lingering in my kitchen from my zucchini bombing a few weeks ago so tonight I gave it a try. My kids voted, repeat.

Chocolate Zucchini Cake
1/2 cup margarine
1/4 cup oil
1 3/4 cups sugar
2 eggs
2 cups zucchini (shredded)
1/2 cup sour cream
1 teaspoon vanilla
4 Tablespoon cocoa
1/2  teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 1/2 cups flour

Topping
3/4 cup brown sugar
1/2 cup chocolate chips
Cream together margarine, oil, sugar and eggs until smooth.  Add the Zucchini, sour cream  and vanilla and stir.  Add dry ingredients and mix well.  Pour into a greased 9×13 pan and sprinkle with brown sugar and chocolate chips.  Bake at 350° for about 40-45 min.

I am looking forward to future zucchini bombing so we can repeat this recipe. Thanks Amy for the fabulous dessert.
Tip: If your zucchini is very large scrap out the seeds. You only want the flesh of the veggie.
