On the table tonight was Spaghetti Squash a first for our family. So simple to make. All you need is a large cutting knife, spaghetti squash, olive oil, and salt and pepper. Now I read on how to bake it and I found two ways 1st) and easiest is to simply wash the squash and spear it with a knife a few times. Place in a shallow pan in an 375° oven for 1 hour. Slice in half and clean out seeds and season to your liking.
-Or 2nd) Wash squash and cut in half (use your muscles). Clean out the seeds and guts (I chose to use this method of cooking the squash because I wanted to harvest the seeds). Place in shallow dish and drizzle olive oil and season with salt and pepper. Add 1 inch of water to shallow dish and cover with tin foil. Bake for 1 hour. Scrap out flesh of squash and serve it up.
Did the family like it? Hmmm. Half and Half. It is just different from the usual. Keep trying new foods and who knows what will come of it.
Variation, so I’ve been told: Serve with spaghetti sauce.
